Passato Organic is a brand of organic wines from the most important appellations in Piedmont: Barolo, Barbaresco, Barbera d’Alba and Barbera d’Asti, Roero Arneis, Langhe Nebbiolo and Chardonnay.

Passato Organic represents a project of sustainability for a select range of historical wines of Piedmont. We have twelve hectares planted with vines within the most expressive and important areas of Langhe, Roero and Monferrato, carefully separated from large plots to avoid contamination with conventional agriculture.

An essential and rigorous philosophy guides production choices. In the vineyard, the focus is on environmental sustainability and the preservation of biodiversity, recognized as the primary source of the beauty and taste of our land. In the winery, we act by subtraction, eliminating any action superfluous to the natural evolution of the wine.

Passato Organic is the realization of a dream of a well-made wine, inseparably linked to its fully sustainable terroir. A sip of Piedmont that has made cleanliness, elegance and pleasantness its hallmark and characteristic. Sustainability the extra reason to keep choosing it.

A modern approach to the land, inspired by that of our ancestors, whose knowledge of the vineyards was the basis of a spontaneous respect for nature, because back then ”natural” was the every and only possible agronomic approach. It is the awareness that, in the vineyard as in the winery, what really matters is «knowing how to do less» rather than «more». That is, to know the limits of technology in order to put it at the service of the natural expressiveness of wine.

Passato Organic is the concrete utopia of a winemaking approach that has chosen to guard the natural perfection of wine by accompanying it in its evolutionary process without forcing and without smearing the natural characteristics of the grape.

A good, clean wine, intimately linked to the territory, obtained in full respect of seasonal rhythms, without the use of chemistry. Wine as it used to be, with the awareness that it is the only possible way for the sustainability of the future.

FOR AN INTEGRAL ORGANIC, WIDE-RANGING

In the vineyard, Passato Organic applies integral organic management, a wide-ranging, global vision that involves both agronomic techniques and the environmental context in which the vineyards are set.
This is how the 12 hectares from which we obtain all our labels were selected. Plots divided between Langhe, Roero and Monferrato that have distinctive characteristics. Small and medium-sized vineyards located far from the large viticultural groupings, surrounded by woods or separated by fields and valleys.
An isolation that ensures separation from conventional viticulture and prevents the risk of contamination. But also a vital richness of the ecosystem, which, globally, benefits from increased biodiversity.

PRESENCE VITICULTURE, SERVING A VITAL ECOSYSTEM

Organic vineyard tillage, for Passato Organic, implies a constant presence between the rows. The aim is to work on prevention rather than cure, increasing the resilience of plants through timely monitoring of their needs. Organic means for us to consider every aspect of the environment as an integral part of a vital system (the soil, the air, the interaction with insects and animals), trying not to impoverish any part of the system itself, but to favor its exchanges.

It means banning any chemical synthetic products in favor of natural preparations. It means allowing the use of sulfur and copper, also in moderation, so as not to pollute groundwater with heavy metals. It means returning the inter-row to wild grasses, regulating their growth without the use of herbicides. Fertilizing plants exclusively with organic compounds, designed based on the nutritional consumption of the vine and the natural endowments of the soil. To consider soils as a treasure chest of vine health and expressiveness, avoiding depletion of organic matter, runoff and excessive compaction, which would impede the ability to retain the right amount of water and encourage the slow release of nutrients. Organic, for Passato Organic, is to guarantee the end consumer that the vine grows in a context of sustainability in which every action is aimed at natural and human well-being. And to extend that guarantee to the entire winemaking process, for total certified organic integrity.
